Breakfast Granola Parfait

Ever since I started making my own granola, I haven't turned back to store-bought versions. Crafting homemade granola is a breeze, and the taste is unparalleled. You have the freedom to personalise it with your preferred nuts, spices, jams, and dried fruits.

Ingredients

  • 2 cups rolled oats
  • 1 and ¼ cups natural almonds
  • 1 and ½ cups desiccated coconut
  • 1 and ¼ cups walnuts
  • ½ cup pumpkin seeds
  • 1 tbsp poppy seeds
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 140g melted butter
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 100g coconut yogurt
  • 50g Strawberry Jam
  • 50g fresh strawberries & blueberries

Method

Step 1

Preheat oven to 180°C

Step 2

In a large bowl, mix the dry ingredients.

Step 3

In a small bowl, mix the maple syrup with melted butter then add to dry ingredients and mix well.

Step 4

Use a spoon to spread the mixture into an oven tray with parchment paper.

Step 5

Cook in the oven for 20 minutes.

Step 6

Fold the mixture after 10 minutes to make sure that is cooked evenly.

Step 7

Remove from the oven and let it cool down.

Step 8

Layer a medium glass jar with strawberry jam, coconut yogurt, and granola. Top with more granola and fresh berries.
